The bundevara is a traditional Serbian pastry prepared with pumpkin-filled phyllo sheets that are baked.

  • 18 phyllo dough sheets
  • 3 lb pumpkin peeled and grated
  • ½ cup oil
  • 18 tablespoons caster sugar
  • 6 teaspoons of cinnamon
For the garnishing
  • Sugar or icing sugar
  1. On a lightly oiled work surface, place a phyllo sheet, add a tablespoon of oil and spread it with a brush, then sprinkle the entire surface of the dough with a tablespoon of sugar.
  2. Place a second sheet on top and repeat the process with oil and sugar.
  3. Place the third sheet on top of the other two.
  4. Take ½ lb grated pumpkin, spread evenly, leaving about 5 inches of space on one side.
  5. Sprinkle the pumpkin with a tablespoon of sugar and a teaspoon of cinnamon.
  6. Roll the pumpkin-filled sheets starting from the empty side.
  7. Place the roll thus formed in a baking dish lined with parchment paper.
  8. Repeat the process with the other sheets to obtain 6 rolls.
  9. Brush all the rolls with oil.
  10. Preheat a convection oven to 350 F (180 C)

  11. Bake for 45 minutes.
  12. Remove the rolls from the oven, cover them with a damp cotton cloth and let cool.
  13. Slice the rolls, sprinkle with sugar or icing sugar and serve.
