  • 3 tomatoes (ripe)
  • 1 onion
  • 2 scallions
  • 1 clove garlic , crushed
  • 3 tablespoons olive oil
  • Salt
  • Pepper
  1. Cut the tomatoes, onion, and scallions into medium sized pieces.
  2. Heat the olive oil and sauté the tomatoes, onion, scallions and garlic for 5 minutes over medium heat.
  3. Reduce heat to low, season with salt and pepper and simmer covered for 30 minutes.

  4. Let cool, then place in the fridge.
