Bananas foster is a New Orleans dessert made from flambéed bananas with banana liqueur and rum, and served with vanilla ice cream.

  • 4 bananas cut in half, lengthwise, then cut in half again
  • 5 tablespoons butter
  • 1 cup brown sugar
  • ½ teaspoon cinnamon
  • 1 small vanilla pod split lengthwise and scraped
  • 5 tablespoons banana liqueur
  • 5 tablespoons dark rum
  • 8 scoops vanilla ice cream
  1. In a frying pan, melt the butter over low heat and add the sugar and cinnamon over medium heat.
  2. Mix until the sugar dissolves (about 3 minutes).
  3. Add the bananas to the pan and mix.
  4. Sauté the bananas for a few minutes to caramelize them.
  5. Add the banana liqueur and mix.
  6. Add the vanilla and mix.
  7. Add the dark rum and flambé the mixture.
  8. Arrange 2 scoops of ice cream per person on a plate and top with flambeéd bananas.
  9. Top with the reserved hot sauce from the pan and serve immediately.
