  • 10 mini bananas
  • Vegetable oil (for frying)
For the batter
  • ¾ cup rice flour
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • 2 drops yellow food coloring
  • Juice of half a lime
  • ¼ teaspoon salt
  • 2 tablespoons caster sugar
  • 1 cup water
  1. In a bowl, whisk all the ingredients except the bananas and vegetable oil until smooth. Let the batter rest for 15 minutes.
  1. Peel the bananas.
  2. Place the banana between two sheets of plastic wrap or between two sheets of parchment paper. Using a wooden or glass board, gently flatten each banana to a thickness of about 1/4 inch (without breaking them).
  3. Heat a large pot with vegetable oil on medium-high.
  4. When the oil is hot enough, dip each banana in the batter and fry for 2 minutes on each side.
  5. Remove the bananas from the oil, drain them. Dip them again in the batter and fry them again for 2 to 3 minutes on each side.
  6. Place the fried bananas on paper towels and serve hot.
