Bife koygua is a delicious traditional beef stew from Paraguay that is prepared with beef steak, onion, tomato, and spices.

Ingredients
  • 4 beef steaks
  • 4 tablespoons olive oil
  • 2 onions , grated
  • 1 cube vegetable broth , crumbled
  • 4 tomatoes , peeled and sliced
  • 4 eggs
  • 3 tablespoons finely chopped parsley
  • 2 teaspoons oregano
  • Salt
  • Pepper

Instructions
  1. Pound the steaks with a meat mallet. Reserve at room temperature.
  2. Heat the oil in a pan and fry the onions for a few minutes.
  3. Add the steaks and the bouillon cube.
  4. Place the slices of tomatoes over the meat. Season with salt and pepper and sprinkle with oregano.
  5. Cover the pan and cook for 15 minutes over medium heat.
  6. Uncover and gently stir to mix the flavors.
  7. Break the eggs one by one all over the surface.
  8. Cover again and cook for another 3 minutes.
  9. Turn off the heat and sprinkle with chopped parsley.
