Lamington is an Australian dessert consisting of squares of sponge cake coated in a layer of chocolate sauce, then in shredded coconut.

For the sponge cake
  • 3 eggs
  • ½ cup unsalted butter (soft)
  • ½ cup sugar
  • 1 teaspoon vanilla essence
  • 1 cup flour
  • ½ teaspoon baking soda
  • ½ cup milk
For the coating
  • 4 cups icing sugar
  • 6 tablespoons unsweetened cocoa powder
  • 1 tablespoon unsalted butter
  • ½ cup milk
  • 3 cups desiccated coconut
Sponge cake
  1. Preheat oven to 350F/180C.

  2. In a bowl, beat the eggs while gradually adding the sugar until it is dissolved.
  3. Add the milk and vanilla essence. Stir in the flour and baking soda. Add the butter into the mixture and continue beating.
  4. Pour the mixture into a lightly greased square baking dish and bake for 40 minutes.
  5. Allow the cake to cool for at least 20 minutes, then place in the freezer for at least 40 minutes.
Chocolate icing
  1. In a saucepan, mix the cocoa powder and icing sugar. Gradually add the milk, butter and milk.
  2. Warm the chocolate mixture over a very low heat until reaching a smooth texture.
  3. Cut the sponge cake into 2-inch (5cm) squares.

  4. Pick each square with a fork, and using a spoon, generously cover each of them with the chocolate mixture making sure that it is evenly applied. Let the excess chocolate drip over the bowl.
  5. Dip each square into the desiccated shredded coconut. Allowing the lamington squares to rest on a cooling rack for at least 30 minutes.
