  • 1 lb corn (fresh or frozen)
  • ½ lb dried mung beans
  • 2 lb squash (or pumpkin or butternut squash), peeled and diced
  • 4 cups water
  • 2 onions , diced
  • 8 cloves garlic , minced
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  1. The night before, soak the mung beans in water for at least 10 hours.
  2. Drain the mung beans.
  3. Boil them for 10 to 15 minutes in a large amount of water.
  4. Meanwhile, sauté onion and garlic in olive oil over medium heat for 6-8 minutes in a separate pan.
  5. Add water, squash, beans and corn to the onion and garlic.
  6. Increase heat to high and bring to boil. Reduce heat to medium and cook, stirring occasionally, until squash is tender, about 15 to 20 minutes until the liquid is reduced to a minimum.
  7. Season with salt and pepper to taste. Serve with rice.
