This month, we are celebrating Mardi Gras with a focus on Louisiana cuisine.

Schiacciata alla fiorentina! Yes, I am taking you to Florence today!



United States: Jambalaya

Although jambalaya is not a mardi gras recipe per se, it is probably one of the most emblematic dishes of Louisiana.



USA: King Cake

Mardi Gras will be celebrated on February 28th. A culinary carnival associated with a lot of calories is being planned on 196 flavors. Our first recipe will be king cake!



China: Honey BBQ Pork (Char Siu)

Pork is another symbolic food along with noodles or dumplings to be eaten during Chinese New Year’s 15-day celebration.



China: Long Life Noodles (Chang Shou Mian)

Our Chinese month is almost coming to an end but a new lunar year already started over the weekend. The celebrations of the Year of the Rooster will continue over the next two weeks, featuring a number of symbolic dishes such as chang shou mian or long life noodles.



Morocco: Harcha

Harcha will be my last recipe of our Moroccan cuisine journey.

North African countries, and Morocco in particular, are not only known for their refined cuisine, but also for their desserts and pastries. Today, I chose to feature one of them, the thousand-hole crepe also known as baghrir.
